Why a cup of flour is not a cup of sugar

A cup measures volume, a gram measures weight. A cup of all-purpose flour weighs about 120 g, but a cup of granulated sugar about 198 g and a cup of honey about 336 g, because they have different densities. So there is no single cups-to-grams number: choose the ingredient first. Weighing is also more accurate, because a cup of flour can vary by 30 g or more depending on how it is filled.
